The apples come from an old small forgotton orchard in Malling a little drive South from our cidery. All the trees are rooted on a slope, leading all the water away from the trees. This means all the nutrients and sugar has a higher concentration in the apples, resulting in an explosion of flavour and a good foundation for fermentation.

Belle de Boskoop was harvested the 23rd of October 2023 and went directly into stainless steel tanks. We wanted a pure, focused expression of the place and the variety. Ingrid Marie was harvested the 1st of October 2023 and went into a 300L Ermitage barrel to amplify the fruitness. Both rested on full lees until bottling the 5th of September 2024 with a bit of fresh juice and a bit of fermenting juice from 2024 to ensure a stable second fermentation in the bottle. It rested on lees in the bottle until the 20th of December 2024 from where it was hand riddled and eventually degorged a la voleé the 22nd of January 2025.

If Belle de Boskoop is the Chardonnay of apples, Ingrid Marie is the Pinot Noir. In this blend we really sense the inviting red fruitiness of the Ingrid Marie that complements the crisp, focused Belle de Boskoop so well. Fine small bubbles elevate the sensation and it all ends in a saline, fresh, savlating finish.

Rhubarb, red apples, toasted bread, sea shells and wet rocks.
