Bramley apples from a single +100 y/o tree located in a small village of True just 10km North of our cidery. The apples have an electric energy, depth and complexity like nothing else.
Harvested the 23th of October 2023 and pressed softly the day after.
After some hours of oxidation, it went directly into an Ermitage 300L barrel, where fermentation and ageing took place without topping up. It was bottled the 12th of August 2024 straight from the barrel by hand as a still wine.
A beautiful balance between the distinct acidity of the varitety, the roundness of the oak and the salty deep expression from the oxidation and almost one year on full lees.
Think grilled lemons, oxidized apples, wet rocks, sea shells, walnuts and warm spices all tied together by an electric energy that seems impossible to descibe.
