Champagne Marguet's 2016 Les Beurys Grand Cru Brut Nature BIO represents the pinnacle of biodynamic winemaking in Champagne. Benoit Marguet's dedication to organic and biodynamic practices sets this champagne apart as both a collector's piece and a testament to artisanal excellence. Grown on a mere 0.39 hectares of Grand Cru land, this unique cuvée is crafted from Chardonnay and Pinot Noir, who were first planted in the early '80s, and represents the convergence of nature’s purity with human artistry.

Visually, this champagne exudes a brilliant golden hue with fine, persistent bubbles that dance effortlessly in the glass. The nose is captivating, offering a symphony of aromas ranging from freshly baked brioche to floral notes and undertones of crisp green apple. On the palate, it delivers a powerhouse of flavors—robust apple and pear complemented by a striking minerality that speaks to its terroir. The mouthfeel is rich yet balanced, with sharp acidity that elegantly segues into a long, electrifying finish that echoes its residence as a Grand Cru creation. Vinifikation
Situated in the high slopes of the Montagne de Reims, Les Beurys benefits from a unique terroir with southeast-facing vines that soak in optimal sunlight. The winemaking process honors tradition and innovation, starting with a strict sorting of mature fruit, ensuring the highest quality. The fermentation occurs in used Bordeaux barrels with natural yeast, and the process eschews malolactic fermentation unless it naturally occurs, preserving the wine's crispness. The champagne ages 'sur lie' until the July post-harvest, followed by a secondary fermentation in bottles for an extended 40 months, developing its complex mousse and aromatic profile.

Mad & Servering
Perfectly paired with shellfish, particularly oysters and lobster, this champagne also complements light fish dishes and creamy cheeses like Brie or Camembert. For the best experience, serve it chilled at around 8-10°C and consider decanting briefly to let the intricate aromas unfurl.
